easy recipes

Here are 2 quick and easy recipes I made this weekend.
These are great if you have little helpers in the kitchen!

Peanut Butter Cookies

~~This is all you need! 1 cup peanut butter, 1 cup sugar and 1 egg
I doubled this recipe and it made 3 dozen cookies.

~~heat oven to 375
~~mix ingredients
~~roll into balls and then roll in a little extra sugar to coat
~~place 2 inches apart on ungreased sheet
~~use fork to make criss cross design
~~bake for 10 minutes and cool on wire racks.


Halloween Snack Mix

Mix the following ingredients in a large bowl:

~~6 cups caramel corn
~~2 cups salted cashews
~~2 cups candy corn
~~1/2 cup raisins

it's raining money!

Have you seen those tall contest booths that blow money everywhere and the person inside tries to catch it quickly? Well, I had a similiar experience today. This afternoon I was at the mall on my way to Christmas shop. Yes, you read that correctly. I try every year to be organized and finish the shopping early but it never works. This might be the year it actually happens. Anyways, I was in the parking lot walking towards the door, holding my jacket closed from the cool breeze. Leaves were blowing every direction and it was getting quite windy. All of a sudden I notice some strange looking green leaves blowing beside me-- it was money! It happened so quickly I was sorta stunned. I'm proud to say that I actually paused to look for the sad person that may be trying to catch their money but there was no one close by. I then decided to try to catch it despite the wind. On 2nd thought, it was probably a dollar so I chose to ignore it. Immediately I thought, maybe it was 50 dollars or a hundred dollars! Who knew? So, I did a funny little dance and tried to catch it with my feet, no luck. The wind blew again and I decided to make a last attempt to gain extra shopping money. I took a few steps backwards, sorta a jog I guess and followed the cash. I noticed a girl in a car watching me and probably wandering what the heck I was doing. I convinced myself it was only a small amount and not really worth the effort so I went back the other direction towards the mall entrance again. Who knows? There may be a very happy little kid out there that grabbed some flying money today and bought some new toys. Maybe a struggling couple used the money for gas this evening. More than likely it was only a dollar but it was still quite funny. I like to imagine how long that money was blowing around, circling the mall and entertaining folks all day. I bet there was a hidden camera somewhere!

I ended the day at Goodys and boy.......do I wish I would have caught that extra money to pay for my shopping trip :)

joy

Today was our annual Ladies "Tea" for our church. There's just something so special about a group of women, all singing praises to God, joined together for a few hours to socialize, serve and receive a blessing. I can only imagine how happy God must feel when 60 women are gathered together for one reason and one commonality. Wait....is that a word? ha ha

We listened to personal stories and testimonies that touched every heart in the room. Every person has a story. And, one day, I might be brave enough to share our adoption story and how God blessed us with Lacey. I'm not a public speaker at all but it might encourage someone or help someone by sharing our story.

It was so sweet to see the little girls today, singing and having fun. I really don't think there is anything more important we can teach our kids than to know Jesus and to be saved one day. These little girls are so precious.

As the men (aka; deer slayers) were out in the cold woods eating stale pepperoni rolls and drinking hot chocolate, the ladies enjoyed a fun day with friends and a delicious, nice meal. Sometimes, we are as different as night and day :)

A Special Day

I can't find the picture online that I wanted to post, so my words will have to suffice.

3 years ago today, Lacey awoke super early like 6am, wide awake and smiling from ear to ear. My sweet little 8 month old baby lay on the couch as I sang to her. We carefully got ready for our big day in court as our friends arrived that morning. The parade of cars headed to the court house to finalize our adoption! Lacey was beautiful in her little white outfit. The photos in my scrapbook are priceless!

For some reason, I don't want to share all the details of our day but just realize how blessed we felt on that October day. Tonight Lacey received a special little gift as we talked about adoption a little bit. We are so proud of her, a sweet little toddler that is just full of life and love.

October 14th-----a day to remember forever!
